Tonight, I made cinnamon chip bread for the first time. I used the recipe out of "The King Arthur Flour Baker's Companion: The All-Purpose Baking Cookbook" which I am certain is going to get lots of use this fall and winter! Special thanks to my Sister and Brother in law for the book and my Aunt for the cinnamon chips. I need to stock up on the chips since they are seasonal (My Aunt found them at Meijer).
I would call this bread a quick yeast bread. It is not a quick bread but it also doesn't require as much time as other yeast breads (it only has one resting period before baking rather than two). It was very simple to make however, I did not follow the direction about waiting for it to completely cool before slicing - can you blame me?!
